Two packs of Super Q Special Pancit Canton beside a plate of pancit canton with shrimp, squid, pork, Chinese sausage and cabbage

Pancit canton is the pancit on the birthday table, and the one most people picture when they hear "handaan." Super Q Pancit Canton is a wheat-based noodle, puffed by deep frying the cooked noodles, which gives it a firm texture that stays chewy under a glossy sauce.

The skill is in the liquid. Canton drinks broth fast, so add it gradually and stop when the noodles are tender, not when the pan is dry.

Ingredients

  • 500 g Super Q Pancit Canton
  • 250 g pork belly, sliced thin
  • 200 g shrimp, peeled
  • 100 g squid, sliced into rings (optional)
  • 2 pieces Chinese sausage, sliced on the diagonal
  • 4 cloves garlic, minced
  • 1 medium onion, sliced
  • 2 medium carrots, cut into matchsticks
  • 1 cup snow peas (sitsaro), trimmed (optional)
  • ¼ small cabbage, shredded
  • 3 to 4 cups chicken or pork broth
  • 4 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp cooking oil
  • Salt and ground pepper, to taste
  • Spring onions and calamansi wedges, to serve

Instructions

  1. 1

    Check the pack

Pancit canton usually goes into the broth dry, with no soaking. Check the instructions on your Super Q Pancit Canton pack before you start.

  2. 2

    Cook the meat and seafood

Heat the oil and cook the Chinese sausage briefly to release its fat. Add the pork and cook until browned. Add the shrimp and squid and cook just until done, then lift the seafood out so it does not overcook.

  3. 3

    Cook the vegetables

Add the garlic and onion and cook until fragrant. Add the carrots, snow peas and cabbage and toss for about two minutes, then set the vegetables aside.

  4. 4

    Build the sauce

Pour three cups of the broth into the pan. Add the soy sauce and oyster sauce, season with salt and pepper, and bring to a simmer.

  5. 5

    Cook the canton

Add the Super Q Pancit Canton and loosen the strands with tongs as they soften. Let the noodles take up the liquid, adding more broth a little at a time until they are tender.

  6. 6

    Finish

Return the vegetables and seafood and toss everything together. Serve hot with spring onions and calamansi.

Tips

Add the broth gradually. You can always loosen pancit canton with more broth, but you cannot take liquid back out.

For a bilao that will travel, take it off the heat while it is still slightly firm. It keeps cooking in the tray.

Cooking it for someone you love

Pancit canton is on almost every Filipino birthday table. Make it for someone on their birthday and you have given them the long-life noodles and the party on one plate.

Selling it: pancit canton pang-negosyo
